Custom orders

2027 Custom Knife orders are now available. The slots are labelled 1-10 in the options below, and I will complete them in order (unless there are similar knives which make sense to be made together) starting in January 2027.

There will be a minimum spend of £500 and I’ll be asking for a £250 deposit to secure your place with the balance being paid before delivery when your knife is ready.  If by chance you don’t like the knife I’ve made I’ll happily sell it though my website and you’ll be moved to the end of the custom list again, I’ll make another with any adjustments we agree on, the deposit however is non refundable. I will email you the week before I commence making your custom to let you know that I am about to start.

Custom builds will include gyuto and chefs knives, wrought iron clad, honyaki, Saya and kogatana combination sets.  I’ll also make suji and single bevels if requested.  I’m open to discussion around specific builds but please be aware that some materials may be a lot more expensive and challenging to work with and polish, and this may effect prices as they will vary depending on the time involved in the builds and material selection. There are no twisted wrought iron customs available this year.

Although it would be nice to have everything in one knife, sometimes this isn’t technically possible. I’m very happy to talk you through what works well together as well as what is possible to achieve. My instagram is a good reference point for ideas and starting points.

An example of pricing

Standard gyuto plain carbon steel, 210mm wrought iron clad, bog oak handle and ash saya  £500.

Honyaki, shirogami, 210mm mirror polished with bog oak handle and ash saya £600

Patterned soft cladding gyuto, plain carbon core 210mm £600

Any of the above knives with a bog oak saya and matching kogatana set add £150

If I can find meteorite that’s appropriate to use as a knife cladding then I’m happy to entertain that,  but the difficulty and cost will come in at a premium. As will materials such as shear steel and tamahagne (if I can get it).

These are special knives and I don’t foresee myself making more than 10 a year, so if you want something specific now is the time. They are a little more expensive as custom work requires more time in designing and communicating than off-the-rack work and I’ve had to cost that in. I’m looking forward to making them and seeing what you come up with.
