Home made steel, there’s a reel on my Instagram homepage describing how I make this steel, it’s a bit of a labour of love. This gyuto was destined as a custom with a full stone set geometry but the fickle nature of the shear steel meant digging out a blister (it’s called blister steel for a reason)
I thought I’d take it though a machine finishing process whereby belts, sandpapers and wheels are used, it’s a bit quicker and leaves a very uniform finish
thus blade has been etched and polished back to reveal the layers in the wrought Iron and grain the the steel
there is a hamon in a lovely spot which is almost impossible to photograph with all the curves in this blade
The hollow grind is not something I do often, it reduces weight and adds food release, this blade is NOT suitable for stone finishing unless your an absolute masochist who wants a waffer thin knife and no fingertips left
