Home made steel, there’s a reel on my Instagram homepage describing how I make this steel, it’s a bit of a labour of love. This suji was a gyuto which I took a chip out of when I was straightening it, so it was customarily made into a smaller knife, I’m getting more accustomed to the blister iron and the failure rate is going down, slowly.
this one has been polished and shaped on benchstones, which is a time consuming process with this steel, no sandpaper or diamond pastes have been near this knife.
